As many of you know, this Rainbow cake has been our “White Whale”, making the colours just right eluded us for quite a while.

One confession.

We have made this Rainbow cake in the past (years ago) for one of our children’s birthday cake using artificial food colours.  You will not believe how much food colouring you need to put in to get those vibrant colours. The reason for this is that cake batter is not clear nor white, it has a yellow cream colour, that requires lots of colouring to cover the background colour.  Also the colours fade away while in the baking process, so you need more to make it stay. Our cake came out vibrant rainbow coloured, our girl was very happy but….. you still have that niggling feeling about the numbers, preservatives and dyes included.

So this rainbow cake has been on our “TO DO” list for a while, but because we knew how much work it would require to get  each colour right, (Is it even possible without artificial colours?) We were a bit hesitant to start, but the time had come. Our first trial was half success.

  • Red – turned to Golden brown
  • Orange – turned yellow
  • Yellow – turned cream
  • Green – Great!
  • Blue – Rainbow slime blue
  • Purple – Mysterious green

An interesting fact we learnt was that each vegetable and fruit has a different ph level and they react differently with the raising agent ( e.g Baking powder) which changes the colour/texture during baking. It feels like there is a chemistry class going on here!

And on side note, If anyone attempting this at home using vegetable and fruit DO NOT USE RED CABBAGE as a blue colouring, your cake will taste like a fart.

Lesson learned from Round 1. Second batch went in.

Yes, this rainbow cake requires a bit more work than other cakes, we need to measure 6 batches of batter, 6 different cake tins and more oven space!

And here they are.

They may not as “Vibrant” as the rainbow cakes you see on Pinterest or Google. But they have a natural feel and they all come with nutritional goodness, and none of the guilt!

The most fun part is…. We just can not forget the reaction from a group of children at the local playgroup – including a very picky eater :). All of them truly loved it!. Well worth the effort!

The cakes have a sponge like texture. You may be taste a bit of veggie “Rainbow” your palette is sensitive, but none of them are overpowering or unpleasant.

What is even better?  This cake is Gluten free, dairy free, egg free, nut free, soy free and Vegan friendly.  100% FREE FROM ARTIFICIAL COLOURS.  This should cover the majority of dietary requirements commonly found at birthday parties!  Happy days :).
